Vegan Caramel Sauce

Who loves Caramel Sauce?

and look what I found!


I found this product at Whole Foods!

Was it yummy?  I liked it. I tasted black strap molasses, so if you don't like that taste then you are probably not going to like this.  But, I would definitely encourage you to give it a try! 

I drizzled it over an ice cream sandwich I made for the family. So, I did not use a lot of it! There is no ingredient listing or nutritional fact info on the container.  I am taking a guess that if you desire to stay lean or get lean, this is probably a product you want to stay clear of.
But, I was feeling adventurous!

Ice Cream Sandwich Recipe:

1 box of gluten free vanilla wafers or cookie of your choice.
Trader Joes Vanilla Soy Ice Cream
Strawberries
Vegan Caramel Sauce

1) Slice up your strawberries.
2) Melt your caramel sauce.

Time for the assembly (make sure to place them in a container you can fit into the freezer, you are going to have to freeze them for a couple of minutes)...

3) Grab a cookie and place a strawberry slice on top of it. Next add some ice cream and then another  strawberry slice, finishing it off with another cookie.  You now have a little sandwich, mine looked more like a little burger! ;)
4) Make sure you are placing them in that container.  When you are done assembling all your sandwiches, drizzle that caramel right on top and place back into the freezer.
5) Check them after 15  minutes and enjoy!

Green Smoothie

HI!

This morning, I wanted to share a routine that I have been doing for the past few weeks and I have been feeling the results already.  I have been making green smoothies.  The honest truth, it has taken me awhile to adjust to the taste.  I don't use any sweeteners at all.  No honey, no agave nectar, nada, zilch, nothing! =/

I thought I would share my base recipe with you and you can adjust as you like!
Sometimes, I might not have Kale and sometimes I'll add more. Sometimes, I will use a mix of fruits or sometimes just one.  The important thing is that you adjust it to your liking!


1 1/2 cup spinach
1/2 cucumber sliced with peel 
1/4 sliced lemon with peel
1 cup frozen strawberries (or any fruit you would like)
1/2 cup kale
1 cup liquid of choice (unsweetened is best)

You might like to add a sweetener to start off and then wean yourself off if you like!
I used Soymilk this time, because that's what I had, but almond milk is nice as well.
I also like to add Chia seeds. I didn't do it this time. =(

Vietnamese Salad Rolls - Raw

Hi Friends, I must share this recipe with you! 

I got permission from the beautiful author Judith Wignall to share this recipe with you.  Her raw recipe book "Raw and Simple" has some delicious and healthy meals!

This was right before rolling them. 




This recipe will serve 4
Prep time 30 minutes

Sweet & Sour Mango Sauce:
Makes 1 cup

1 cup chopped mango
3 tablespoons agave or sweetener of choice
3 tablespoons lime juice
1/2 tablespoon grated ginger
1 clove garlic
1/2 teaspoon crushed red pepper flakes (optional)
1/4 teaspoon sea salt
**Blend ingredients in a blender or food processor. Adjust seasonings as desired.

Spicy Tahini Sauce
Makes 1 cup

1/2 cup tahini
1/2 cup water
3 tablespoons tamari
2 tablespoons lemon juice
2 tablespoons agave nectar or few drops of liquid stevia
1 tablespoons red Thai curry paste (optional)
1 tablespoon grated ginger or ginger juice
1 clove garlic
1/2 teaspoon crushed red pepper
**Blend ingredients in a blender or food processor. Adjust seasonings as desired.

Salad Rolls
4 large chard, cabbage, or collard leaves
1 head romaine or other green lettuce
2 cups shredded carrots
2 cups bean sprouts
4 green onions, sliced lengthwise, green parts only
2/3 cups mint leaves
2/3 cup chopped cilantro
** Lay a chard, cabbage, or collard leaf on a plate or cutting board. Fillet the thick stem carefully using a paring knife. This will allow you to roll the leaf easier without it breaking.
** Lay two leaves of lettuce inside of the chard leaf and fill with remaining ingredients as desired. Lay another couple of lettuce leaves over the filling and roll! Serve with sauces.

Cauliflower Couscous - Raw

The Cauliflower Couscous was a hit.

Three servings for my hubby and Gigi had some too!  
(For those of you who know Gigi, you know it's a big deal for her to have some.)
I will definitely be making it again!!!


So did I come close!!!!

I received a book in the mail awhile back.  What kind of book ?  Here, it is..."Raw & Simple"



Adriana, mailed this to me and I must say I was so excited.  I just feel so bad that I haven't made anything yet.  But, today is a new day.....So, I will be picking something out of this book.

Watermelon Juice


MMMMMM...... watermelon juice. I've been missing this drink from my favorite restaurant "Native Foods" so I decided to make some myself. I received some major love from my babies for making this!


5 cups seedless watermelon cubed
1/2 of a lemon freshly squeezed
1-2 cups of ice
enough water to get the watermelon moving (1 cup)
sweetener of choice to taste (you don't need much)

Blend all till smooth and strain if you like!

Don't forget to add your mint leaves!
